Cauliflower Crust Pizza Recipe

A healthy alternative to the food everyone loves!

Ingredients:

Cauliflower Base:

2.5 lbs large (6" – 7" wide) head of cauliflower
or 2 lbs of store bought riced cauliflower
1 large egg
1 tsp Italian seasoning or dried oregano/basil
1/8 tsp salt
1/4 tsp ground black pepper
1/2 cup Parmesan or Mozzarella cheese grated/shredded
1 Tsp Olive oilSauces:
Tomato sauce base

Pesto baseToppings, Opt for Healthy Plant Based toppings such as:
Spinach
Tomatoes
Onions
Capsicum
Artichoke

Instructions

  • Preheat oven to 375 degrees F and line baking sheet with unbleached parchment paper.

  • Rinse cauliflower, remove the outer leaves, separate and chop to fit in food processor.

  • Process in a food processor until “rice” texture forms, can do in separate batches if too large. Transfer the processed cauliflower onto the prepared baking sheet and bake for 15 mins.

  • While baking, prepare a large bowl by lining it with cheesecloth.Remove from the oven and transfer the cauliflower to the large bowl and allow it to cool for 15 minutes.

  • After cooling for 15 minutes, squeeze out the liquid out (cauliflower inside the cheesecloth) as hard as you can. Do this until no further liquid comes out.

  • In a separate medium mixing bowl whisk the egg, herbs, salt and pepper for 10 seconds.

  • Mix in the cheese and the squeezed cauliflower until combined.

  • Line same baking sheet with new parchment paper and grease with olive oil.

  • Transfer the cauliflower pizza dough onto the middle and flatten with your hands until it is a thin pizza crust, about 1/2 inchBake this crust for 20 minutes.

  • The crust is now ready, add your favorite toppings and sprinkle with a little cheese.

  • Bake pizza with toppings until cheese on top turns golden brown.

  • Cut the pizza up into slices and enjoy!
