Creamy Mushroom Oats

Sweet or savoury, either way it’s a delicious nutritious meal.

Ingredients:

For the Sautéed Mushrooms
Oil 2 tsp
Salt to taste
Mushrooms 1/2 cup

For the Mushroom oats
Oil 1 tbsp
Garlic 1 tbsp
Onions 1/2 cup
Salt to taste
Green chillies 2 tsp
Walnuts 2 tbsp
Mushrooms 1 cup
Oats 3/4 cup
Plant based Milk 1 cup
Basil 1/4 cup

Instructions

  • Take olive oil in a pan, sauté the mushrooms with some salt, keep it aside.

  • In a larger pan add olive oil, add garlic and onions, add salt and sauté for 2 mins, then add walnuts and mushrooms.

  • Sauté till the mushrooms are half cooked.

  • Add rolled oats and sauté for 2 mins, then salt and add milk, cover and cook till the oats are cooked and milk is reduced.

  • Add some fresh basil and cook for 30 seconds.

  • Remove in a bowl, garnish with walnuts, basil and sautéed mushrooms.
