Rajma Apple Salad with Tamarind Dressing

Enjoy this plant-based rajma nourish bowl! Great for lunch or dinner.

Rajma Apple Salad

Ingredients:

Rajma 1 cup
Chopped tomatoes 1/4 cup
Chopped onions 1/4 cup
Chopped apple 1/2 cup
Chopped green coriander 1 tbsp
Chopped mint leaves 1 tsp
Tamarind pulp 2 tsp
chaat masala 1 tsp
cumin powder 1 tsp
red chilli powder 1 tsp
Salt as preferred honey 1 1/2 tsp
olive oil 2 tsp

Instructions

  • In a large mixing bowl, take boiled rajma.

  • Add chopped tomatoes, onions, apples, coriander and mint.

  • Keep aside.

  • Let's make the dressing

  • In a glass jar (with a lid) take tamarind pulp, all dry spices, honey and olive oil.

  • Cover the jar and shake very well.

  • Pour over the salad.

  • Top with roasted pumpkin seeds.

  • Mix everything very well.

  • Garnish with mint leaves and serve.
